Mint mousse

the recipe


  • 1,450g whipped cream
  • 570g white chocolate
  • 10g gelatin
  • 15 eggs
  • 300g mint liquer
  • 15 fresh mint leaves
  • 300g sugar


  • 200g milk
  • 300g chocolate
  • 100g leiter (sugar syrup)


Divide the eggs into yolks and egg whites. Melt the chocolate and merge with the egg yolks, stir and add to gelatin. Cook on steam. Pour into the egg white a little more sugar and whisk well. When ready connect the egg yolks and egg whites and then add the cream. Gently mix it toghether and add the liqueur and finely chopped mint. Leave it to cool. Melt the chocolate on steam.
The dressing: heat the milk and add the chocolate. Stir well and add Leiter (sugar syrup).
