Fresh salmon fillet with spinach and peanuts

  • 200 g salmon
  • 150 g spinach
  • 50 g peanuts
  • 1 TS of fish stock
  • 1 TS soy sauce

Wasabi foam:

  • 1 TS powder wasabi
  • 3 dcl water
  • 8 g soy lecitine


Bake the salmon on the grill. Grind the peanuts finely in a mortar, then in a pan add soy sauce, fish stock and mashed peanuts. Altogether boil for 5-10 min. Blanch the spinach and drain well of water, then serve with salmon on a serving dish like so you pour peanut sauce and garnish with foam of wasabi over the spinach.
Wasabi foam: Mix all the ingredients for the wasabi and blend until they form a foam.
